Like her canon self, Assassin was, in life, a particularly pious candidate for the name of Hassan-i-Sabbah. She spent years studying and modifying her body in order to achieve the techniques of all eighteen of the past holders of the title. In addition, she created her own Zabaniya technique called Ichor of Reverie. However, she was again and again denied the title of Hassan due to the fear the others of the order had for her power and her zealous faith. In the end, she died without achieving the title of Hassan and thus has no true name. Instead, she is simply identified as "Zealot."
Again, like in canon, Assassin was summoned for a Grail War in the Assassin class, the special class reserved for those who hold the title of Hassan-i-Sabbah, because of her proximity to the title. However, unlike her canon self, she was not called by Jester Cauture into the sixth Grail War, but by Claudia Hortensia Kotomine into the fourth Grail War. In this universe, instead of Claudia committing suicide to try and make Kirei feel love for her, she hesitated at the last second and Kirei was the one who killed himself. Claudia received the command seals in lieu of him, and became a Master allied with Tokiomi Tohsaka, the magus approved by the Church to win the Holy Grail.
While she considered the Holy Grail ritual to be a heretical ritual, Assassin did not lash out at Claudia as she did Jester Coutre. Instead, because Claudia made no claims at actually being Assassin's Master and persuaded Assassin that she did not seek the Grail for her own selfish wish, Assassin decided not to kill her immediately and to work with her to keep the Grail from the truly selfish magi. She was also determined to protect Claudia because she was a Christian and thus among the People of the Book (followers of Abrahamic religions and thus allowed certain rights under medieval Muslim law not given to pure pagans), and a harmless woman to boot.
Though Tokiomi Tohsaka was included among these selfish magi, he was Claudia's teacher and ally in the Grail War. Therefore, Assassin, as Claudia's Servant, had no choice but to follow Tokiomi's plans for the time being. The plan was to have Tokiomi's flashier Servant, Gilgamesh, act as a distraction for the other Servants, while Assassin hunted down and killed their Masters. Meanwhile, Claudia would hide her identity as Assassin's Master, pretending to be no more than the assistant of Risei Kotomine, her father-in-law and the moderator of the Grail War. Thus, it would be one pair of Master and Servant operating completely in the open, and another pair completely in the shadows.
This plan worked smoothly at the beginning of the Grail War. When most of the other Servants were involved in free-for-all at the docks, Assassin found and killed Kayneth El Melloi, Lancer's Master.
As the War escalated, Assassin found that her allies were more worrying than her enemies. Tokiomi might have been an annoyance and a heretic, but his Servant Gilgamesh was something of a monstrosity. A non-believer who seemed to be the opposite of everything Assassin stood for, he insisted on casting strange glances on or saying weird things to Claudia. However, she also had to put up with him because he was technically an ally and central to Tokiomi's strategy. Instead, she focused on cautioning Claudia against him, trusting that her partner would avoid Gilgamesh when Assassin was not there to protect her.
The matters with both Tokiomi and Gilgamesh were resolved in the battle with Caster. As in the canon of Fate/Zero, Gilles de Rais had been summoned as Caster. He had murdered many children since his summoning, not only making him morally reprehensible, but also risking exposing the Grail War to the public. As in canon, Risei placed a bounty on Caster's head, offering an extra command seal to any Master who could kill Caster. While Tokiomi was more interested (at least on the surface) in the reward, Claudia and Assassin were more concerned with stopping Caster's atrocities. Assassin was sent to track down Caster, but was unable to find him until he summoned a giant sea monster in the harbor. While the other Servants present attacked Caster, Assassin was in the crowd, trying to locate Caster's Master and kill him to stop his Servant. However, her activities were interrupted by Claudia's Command Seal.
The order Claudia issued was to return to her side and kill Tokiomi, something Assassin accomplished easily with her Ichor of Reverie, which burned him to death. Afterwards, she, Claudia, and the Master whom Claudia had saved at the cost of Tokiomi's life, Kariya Matou, were confronted by Gilgamesh. Instead of taking revenge for his Master, Gilgamesh assumed a casual demeanor and behaved as if he was entertained by Claudia's actions. Afterward, he even agreed to continue as Claudia's ally. In fact, he was willing to attach himself to Claudia as her second Servant, something that irked Assassin to no end.
Because Claudia's prana was not strong enough to sustain two Servants, especially with one of them being Gilgamesh, Assassin was persuaded to sustain herself by devouring the souls of criminals and thus removing some of the prana drain from Claudia. Though it was a shameful act, murdering others for her own survival, she was convinced to do it for the greater goal of destroying the Grail. Besides, Claudia had reassured her that it would not be for long. With Gilgamesh's power, it would be easy to subdue the rest of the Servants. Not very many souls would be used to power Assassin for that time, and the ones used would only be the most despicable scum that she could find.
Though Gilgamesh's existence was a problem, Assassin was comforted by Claudia's other new alliance--Kariya Matou, the Master of Servant Berserker. After Tokiomi's death, Claudia used a command seal to order Assassin to protect Kariya. While fulfilling this duty, she was able to converse a few times with him, and learned he was less selfish than the rest of the magi. He did not seek personal glory, or forbidden knowledge, or a wish for power or riches. He simply wished to use the Grail to save his adopted niece, a girl named Sakura. Though he was a non-believer, Assassin nevertheless grew to respect him and hoped to show him the truth of the Grail as a heresy and to convert him to the ways of God.
With only two enemy Servants left, Claudia decided it would be better to attack Saber first. After all, Saber was the Servant of the Einzberns, which mean her team might have possession of the Grail's vessel. However, as Claudia, Kariya, and their Servants prepared for this attack, Assassin was transported into the Tower of Animus.
Personality:
The most distinguishing thing about Assassin is her faith. She is an extremely pious woman, seeking to prove her faith God through following His word and defending His followers. For her, her training to become Hassan was another proof of her faith. She would become a holy warrior to fight for God against the enemies of her sect, and lead the people of her sect throughout their tribulations. Along that line of thought, she reveres the previous generations of Hassan as Defenders of the Faith. Her hatred of the Grail, too, comes from faith. In her faith, there is no Holy Grail, and the summoning of Servants marks tampering in knowledge that should not be allowed to mankind.
Assassin's piety makes her seem almost saintly at times. She endured the pain of her training without regret or complaint. When she, for all her efforts, was denied the title of Hassan, she did not blame the other members of her sect. Instead, she blamed her own immaturity and lack of faith. Again, when the Hundred-Faced Assassin was chosen as Hassan, she was neither jealous nor resentful and instead acknowledged her defeat gracefully. She accepted her lot and patiently continued to refine her faith, finally dying as an unnamed zealot. When summoned to join the Grail War in both the original universe and the alternate universe, she was given the knowledge that the past generations of Hassan had chosen to participate in this heretical ritual. However, she did not hate them as heretics. She continues to respect and revere them and only hates the Holy Grail that would draw them into the War, thus making them into victims. When she has the choice to blame someone else or herself, she will always choose herself. She also never prides herself in her abilities. If anything, she considers them half-baked because neither her power or piety were strong enough to allow her to become Hassan.
She takes no pleasure in her killings, always offering her enemies a chance to repent or escape. The only exception is when letting them live would ultimately harm the world more than killing them at that moment. For example, enemy Masters and Servants, who would serve to perpetuate the heresy of the Holy Grail War. Despite her class, killing is always no more than an ugly necessity. Out of battle, she is patient and accepting, even of non-believers. If she finds a Nonbeliever particularly virtuous, she will even work to try to convert them. When with someone of a similar faith and degree of piety, like Claudia, she rarely censures them, instead trusting that their faith will one day guide them to the true word of God. She ultimately believes that everyone, Believer or Nonbeliever, has some value to their lives. She never hates or bears grudges, being incapable of feeling or understanding the value of these negative emotions. She only ever hates or feels disgust for heretical things such as the Holy Grail or Caster's crimes, and even then, she feels no more than disapproval for the magi who would involve themselves with the ritual.
However, all this does not make Assassin passive. She is extremely stubborn, willing to risk even death to accomplish her goals. In life, her determination was such that she would undergo painful body modifications to learn the secrets of the Assassin. She was also ready to die or kill in order to protect her faith as Hassan-i-Sabbah. While she took no pride in her skills, she also believed that as half-baked as they were, they would still be adequate to serve God in whatever meager capacity. As Servant Assassin, she is willing to let herself fade in exchange for destroying the Holy Grail and all the Masters and Servants it has involved in its ritual. In the face of that great goal, she is willing to compromise other parts of her faith, resorting to devouring criminals to sustain herself long enough to find and destroy the Grail. Otherwise, her piety is unshakable. Neither anger nor disappointment let her turn away from God. She also takes her vow to defend Claudia very seriously, placing it on par with her mission to destroy the Grail. Because of Claudia, she allowed herself to work beside Tokiomi and then Gilgamesh, though she disapproved of both of them.
She is also not without negative feelings. While she cannot hate, she feels a great deal of frustration when witnessing heretics like Gilgamesh, who behave like they are the opposite of everything she stands for. This is in no small part because of the corrupting things Gilgamesh would say to Claudia. However, she also trusts Claudia to resist his influence with her faith. She is also definitely wary of things that could harm Claudia. Though she trusts God to allow her enough strength to protect Claudia, she does worry for her partner.
In general, the AU lets her be more mellow than canon. While everything else about her personality is the same, her friendship with Claudia allows her to distract herself from her mission and explore her human side. Unlike in canon, when she quickly killed her Master and then set off on her mission, here, she is surrounded by people like Claudia, Kariya, and Gilgamesh. While Kariya and Claudia help her loosen up from her typical warrior persona, Gilgamesh is slowly teaching her anger and hatred. She is much less of the stoic saint she appears as in canon.
Abilities:
Assassin is a Servant, with speed, strength, and endurance above human capacity. Their various skills are quantified as Statistic and Parameters. Assassin's statistics are never given in canon, though with the exception of categories like Noble Phantasm or Agility, the statistics of the Assassin Class tend to be low, never coming higher than a C.
For the sake of the AU, her stats look like this:

Noble Phantasm: High, A-B level because of the flexibility of her Zabaniya, which duplicates the Zabaniya used by her predecessors

As an Assassin, she possesses skills specific to her Servant Class, which look like this:

Her Personal Skills are unknown, but likely include Protection from Wind and Self-Modification, Personal Skills of almost every Assassin except the Hundered-Faced Hassan, who eschewed the typical body modification of the Assassins.
Like all Assassins, Assassin's Noble Phantasm is called Zabaniya. It is the manifestation of ultimate technique of each of the generations of Hassan. With the exception of the Hundred-Faced Hassan, each Hassan's ultimate technique also stemmed from body modifications that would make them more than just human. Many of these techniques, lethal as they are, are also based on ancient, demonic curses. Assassin's Zabaniya is unique because it allows her to use the techniques of eighteen past Assassins, plus a nineteenth one of her own. This is because she had learned all nineteen during her lifetime, at the cost of modifying her body nineteen times so that, with the exception of her face and hair, her form is vastly different from that of a human. However, when not in battle, she wears a heavy cloak and seals her modification so she appears to have a humanoid body.
The various forms of Zabaniya that she has been shown using are
Delusional Heartbeat: By grafting the arm of the evil Spirit Shaytan to herself, Assassin can use the cursed hand to generate and crush an illusion of an opponent's heart. This then kills the opponent by destroying their heart via curse. Unlike the original wielder, this is Assassin's third arm, spouting from her back.
Cyber Phantasy: By modifying her left hand, Assassin gained the power to turn a target's brain into gunpowder by touching their head. This gunpowder then explodes, destroying most of the victim's body.
Ichor of Reverie: Assassin's own, original Zabaniya. It forces the targets to incinerate themselves.
